INGREDIENTS

 

 

  • ½ onion, chopped
  • 2 ribs of celery, finely diced
  • 2 tablespoons of butter
  • 2 cloves of garlic, minced
  • ½ cup of all-purpose flour
  • ½ teaspoon of fresh thyme leaves, or ¼ teaspoon of dried thyme
  • 2 cups of fresh corn kernels
  • 1 large potato, peeled and diced
  • 3 cups of chicken broth or vegetable broth
  • 1 cup of milk
  • ½ teaspoon of kosher salt
  • ½ teaspoon of pepper
  • chopped chives to garnish.

INSTRUCTIONS

 

  • Combine the onion, celery, butter, and garlic in a saucepan. Cook over medium heat until the onion softens (about 4 minutes).

 

  • Add the flour and thyme and cook for an additional 1 minute. Stir in the corn and potatoes.

 

  • Pour in the broth, cream, salt, and pepper. Simmer uncovered for 15-20 minutes or until the potatoes are tender.

 

  • Utilize the Beko Table Blender to blend the soup until smooth.

 

  • Garnish with chives and serve warm.
